不同发育期蚱蝉营养成分测定与分析

目的 对不同发育期知了的营养成分测定与分析,为人们选择适合的知了虫体提供依据.方法 水分测定采用直接干燥法;蛋白质测定采用微量凯氏定氮法;脂肪测定采用索氏提取法;碳水化合物测定采用斐林氏滴定法;维生素C测定采用2,4-二硝基苯肼法;维生素B1、B2测定采用比色法;矿物质元素测定采用原子吸收法.结果 知了猴的蛋白质、碳水化合物、维生素C以及钠、钙、钾、镁、铁的含量较高;白知了的脂肪、维生素B1以及锌、铜、锰的含量较高;黑知了的维生素B2的含量较高.结论 三种不同发育期的知了都属于高蛋白、低脂肪且含有丰富的矿物质元素的动物食品.

Determination and analysis of cicada`s nutritional content from different developmental phases

Objective To measure and analyze the cicada`s nutritional content from different developmental phases,and provide chosen basis for people to choose an appropriate cicada body.Methods The moisture,protein,fat,carbohydrates,vitamin C,vitamin B1,B2 and mineral element were determined by direct drying method,Kjeldahl,oxhlet extraction,Philip lam titration,2,4-dinitrobenzene hydrazine method,colorimetric method,atomic absorption method.Results Golden Cicada were rich in protein,carbohydrate,vitamin C and sodium,calcium,potassium,magnesium,iron contents,while White Cicada were rich in fat,vitamin B1,and zinc,copper,manganese content,and Black Cicadas was high in vitamin B2.Conclusion Three cicadas from different developmental phases are all animal food with high protein,low fat and rich mineral elements.
