红茶与绿茶中微量元素溶出率的比较研究

摘    要:目的 研究红茶与绿茶中微量元素溶出率的差异。方法 采用原子吸收分光光度法 (AAS)测定红茶、绿茶及茶液中微量元素的含量。结果 与绿茶相比 ,红茶中钙、铁溶出率显著降低 ,铜溶出率显著增高 (均P <0 .0 0 5 ) ;而镁、锰、锌溶出率无显著性差异 (P >0 .0 5 )。结论 不同生产工艺对茶叶中一些微量元素溶出率会产出显著影响。

Abstract:Objective To do research work on differences of water-dissolving capability of trace elements between red tea and green tea.Method AAS was used to determine the contents of trace elements in red tea,green tea and tea soup.Results The dissolvable ratios of Ca,Fe were much lower in red tea than that in green tea( P <0.005),but Cu in red tea was able to dissolve in water more easily than that in green tea.There is no difference in the water-dissolving capability of Mg,Mn and Zn between red tea and green tea.Conclusion Tea processing can have a definite influence on water-dissolving capabilitiy of some trace elements.
