摘    要: 目的考察莱菔硫烷水溶液的稳定性,以确定其最适保存条件。方法采用HPLC测定溶液中莱菔硫烷的含量,考察了高温、pH值、光照对莱菔硫烷溶液稳定性的影响。结果在HPLC测定溶液中莱菔硫烷含量的平均回收率为100.45%,RSD为1.02%。若高温加热时间较长或pH偏高,莱菔硫烷含量有明显降低,降解产物含量增加。结论莱菔硫烷溶液对热不稳定,随温度升高或加热时间的延长会逐渐分解,对光线的稳定性好。pH3.0条件下最稳定,不适宜在碱性环境中存放或使用。

Abstract:OBJECTIVE To observe the stability of sulforaphane solution. METHODS The concentrations of sulforaphane was determined by HPLC. The stability of sulforaphane solution under heat, pH value and light was studied. RESULTS The average recovery of the assay was 100. 45% with the relative standard deviation of 1.02% . After being treated with long time heating, high temperature, and higher pH, the content of SF was decreased. CONCLUSION Sulforaphane is unstable to heat. Sulforaphane appears as a stable compound when being exposed to light and in acidic condition with pH at 3.0.
