摘    要:目的:探讨日照绿茶中微量元素含量及溶出率。方法:用原子吸收分光光度计测定消化和浸泡两种不同处理下茶叶中微量元素的含量,以消化法测出的结果为基准,求茶叶浸泡液中各种微量元素的溶出率。结果:平均溶出率分别为Mg 21.9%、Cu 20.8%、Fe 2.45%、Zn 22.5%、Mn17.6%、Sr 20.3%。溶出率随浸泡次数增加而降低,总溶出量中80%的Mg、Cu、Zn、Sr、及10%左右的Fe和70%Mn在第1次浸泡中被溶出。结论:实验所得数据用于评估饮茶对6种微量元素的实际摄入量,指出茶叶不是这些元素的良好食物来源。

Abstract:Objective:To discuss the contents and dissolved rate of trace elements in Rizhao green tea.Methods:The atomic absorption spectrophotometry was adopted to measure the contents and dissolved rate of trace elements in the samples processed by being assimilated and decocted.Results:The average dissolved rate were 21.9% for Mg,20.8% for Cu,2.45% for Fe、22.5% for Zn、17.6% for Mn and 20.3% for Sr respectively.The dissolved rate decreases gradually with the processing.About 80% of Mg,Cu,Zn,Sr,10% of Fe and 70% of Mn were in the first infusion of tea.Conclusion: The six trace elements from the tea infusion extracted are too little to meet the recommend dietary allowance.Therefore,tea is not a rich food source of Mg,Cu,Fe、Zn、Mn、and Sr.
