摘    要:目的 提高食品生产企业卫生细菌化验技术水平,保障出厂食品的卫生质量。方法 对21 家食品生产企业的卫生细菌化验室进行现场察看和询问调查。结果 化验室布局基本达到要求,仪器设备较缺乏,操作制度不全,只有少数化验室制订了操作制度,只有71 .43% 的化验室按GB4789 - 94 的标准进行操作,消毒隔离工作和人员素质也有一定的差距。结论 要保证出厂食品的质量,必须加强化验室的管理。

Abstract:Objectives To improve the technical level of hygienic bacterium testing in food production enterprises and to guarantee the hygienic quality of food. Methods To observe and look into the hygienic bacterium testing laboratories of 21 food production enterprises. Results The overall arrangements were generally up to the requirement but some were in want of equipments and some operating rules were not well kept to. Only a small number of testing laboratories had set up operating rules. Only 71.43 percent of the testing laboratories operated according to the GB4789-94 standard. Sterilized isolation and personal quality were not up to the requirement. Conclusion To guarantee the food quality, measures must be taken to improve the management of testing laboratories.
