摘    要:目的]全面了解和掌握重庆市农村餐饮业卫生状况,制定有效的监督管理对策,保护农村人民群众身体健康。方法]对重庆市农村地区餐饮业卫生许可情况进行抽样调查。结果]大量的农村餐馆无有效的卫生许可证,缺乏必要的卫生设施,经营场所卫生状况较差;从业人员未经健康体检合格上岗工作,且食品卫生知识贫乏。结论]农村餐饮业存在的卫生问题较多,建议加大监督执法力度,取缔无证经营者,加强从业人员的卫生知识培训,建立健全农村食品卫生监督管理网络,加强卫生宣传教育和舆论监督引导,建立农村食品卫生质量监测预警网络。

Abstract:Objective]To understand the sanitary situation of catering industry in countryside in Chongqing roundly and enact effective health supervisor measures to protect the health of people in rural area.Methods]An investigation of the hy-giene licenses situation of special subject was carried out by Health Supervisor Institute of Chongqing Municipal Health Bureau during 2005.Results]A lot of catering had neither hygiene licenses nor necessary sanitary facilities;sanitary conditions of catering place was bad.Many employees had no health certificates and lacked of knowledge about food hygiene.Conclusion] The investigation indicates that there are many hygiene problems.It is suggested that supervision should be enhanced.Marketers of food without hygiene license should be prohibited.Knowledge of food hygiene training should be provided for employees.At the same time,network of food hygiene supervisor in countryside should be established and perfected.Public awareness about food hygiene should be enhanced and surveillance by public opinion should be guided.EW(early warning)network of moni-toring of food hygienic quality in rural area should be set up.
