摘    要:目的:研究葡多酚、大豆异黄酮、大豆皂苷对亚硝酸盐(NO2-)的清除作用,并观察PH、温度对NO2-的清除效果的影响。方法:在反应条件下,参照GB/T5009.33-2003方法,测定一定量的NO2-与葡多酚、大豆异黄酮、大豆皂苷反应后的残留量,计算清除率。结果:葡多酚、大豆异黄酮、大豆皂苷对NO2-均有清除作用。在一定范围内,随反应体系中葡多酚、大豆异黄酮浓度增加而清除能力提高。pH、温度对NO2-的清除效果有一定影响。结论:葡多酚、大豆异黄酮、大豆皂苷均具有清除NO2-的作用,在体外模拟人胃液条件下清除效果明显,提示对胃内NO2-的清除及肿瘤的防治具有较大意义。

Abstract:Objective:To study the eliminating effect of grape polyphenols,soybean isoflavone and soybean saponin on NO-2 in vitro and the influence of pH and temperature on the eliminating nitrite effect.Methods:According to the method of GB/T5009.33-2003,the residues of NO-2 after reaction with grape polyphenols,soybean isoflavone and soybean saponin were determined and the eliminating ratio was calculated.Results:Grape polyphenols,soybean isoflavone and soybean saponin all had eliminating effect on NO-2.The effects were increased with the concentration growing of grape polyphenols and isoflavone.The Nitrite-eliminating effects were influenced by the pH and temperature in experiment respectively.Conclusion:Grape polyphenols,soybean isoflavone and soybean saponin are able to eliminate NO-2.Under the condition of simulated human gastric juice,the effects are obvious.The results showed that the research nitrite-eliminating effects of grape polyphenols,soybean isoflavone and soybean saponin on NO-2 has positive meaning for the eliminating nitrite and prevention of tumor.
