广州市餐具集中洗消行业卫生及管理现状的调查

目的了解广州市餐具集中洗消行业的卫生状况，为政府制订相关卫生规范及加强管理提供依据。方法现场问卷式调查广州市餐具集中洗消企业的工艺流程及卫生管理等，并对餐具及包装材料进行卫生监测。结果219宗餐具消毒后经大肠菌群纸片检测的总合格率为90．4％，包装材料的合格率为100％．35套餐具分7段保存期检测大肠菌群，合格率为100％，广州市卫生行政部门未对该行业发放卫生许可证。结论目前广州市大部分的集中洗消企业在设施布局及卫生管理等方面仍存在缺陷，政府需制定相关卫生规范并加强监督管理以促进该行业健康发展。

Survey of the Sanitation and Management Status in the Tableware Decontaminating Industry

Objective Find out the sanitation status of tableware concentrated decontaminating industry, and provide the basis for the government can formulate relevant sanitation regulations and strengthening management. Methods Investigate the processes and managements of sanitation in the tableware decontaminations enterprises by the way of local questionnaire. Supervise the tableware and wrapper in the processes. Results The eligible rates of tablewares that detected by Coliform paper were 90.4% and some after seven times of being saved were all 100%, the wrappers＇ eligible rates were 100% too. The health government hasn＇t provided any managements to this industry in Guangzhou. Conclusion There are disfigurements in establishment of overall arrangement and sanitation management in the most of the decontaminations enterprises. The government has to establish the regulations of sanitation and strengthening management so that such industry can grow healthily.
