摘    要:
目的筛选耐酸、耐胆盐能力强,能耐受人体胃肠环境在肠道中存活生长的乳酸菌菌株.方法对2株链球菌和6株乳杆菌进行耐酸、耐胆盐能力试验,并接种在人工胃液和人工肠液中,在不同时间段取样,活菌计数.结果菌株BLL26在pH值为1.5的培养液中1h,活菌数为107 CFU.mL-1,存活率为5.38%;在猪胆盐浓度0.3%的培养液中,活菌数为108 CFU.mL-1,存活率为58.9%;在人工胃液中3h,活菌数为106 CFU.mL-1;在人工肠液中6h,活菌数没有变化.结论菌株BLL26是能够耐受人体胃肠环境的菌株,其发酵特性适宜酸乳发酵.

Abstract:
Objecetive To screen lactobacillus strains having acid and bile salt resistance, which can tolerate gastroenteric environment and survive in human intestine. Methods Two strains of streptocoecus thermophilus and 6 strains of lactobacillus were conducted acid and bile salt resistance test and vaccinated in artificial gastric fluid and intestinal fluid. The samples were taken and the survival counts of lactobacteria were carried out at different times. Results The viable cell counts of strain BLL26 was 10^7CFU·mL^-1 in culture medium of pH 1.5 for 1 h with survival rate 5.38% , 10^8CFU·mL^-1 in culture medium of 0.3% porcine bile salts with the survival rate 58.9% , 10^6CFU·mL^-1 in artificial gastric fluid for 3 h and of no change in artificial intestinal fluid for 6 h. Conclusion The strain BLL26 was the target strain that could tolerate human gastroenteric environment and its fermentation properties were suitable for lactic acid fermentation.
