摘    要:
在调查农村婴幼儿营养状况及食物资源的基础上,配制了一种以黄豆、大米为主要成分的简易营养米粉。该营养米粉的蛋白质含量为19.58%,蛋白质的AAS与酪蛋白相同。以初断乳雄性大鼠为实验动物进行四周喂养实验,结果表明:该米粉能促进幼年大鼠生长发育,其PER值达酪蛋白的85%,与亨氏高蛋白营养米粉比较,差异无显著性(P>0.05)。该营养米粉就地取材,成本低,制作简单,营养价值高,适于在农村地区推广应用。

Abstract:
In order to solve the weaning food problem in the rural area,we have made akind of high protein infant cereal with local resouces like soybean,rice,egg et.This mixturecontained l9. 58%protein, 13. 04?t, 52. 42?rbohydrate,The protein's limitting amino acid is sulphur containing amino acids, the AAS is 83,similar to casein,The rat feeding experiment have indicated that this infant cereal is able to promote the growth of weanling rats, the protein efficacy ratio(PER)is l. 88, which is 85%of that of casein, no significant statistical difference with heinz high-protein cereal(P>0. 05).
