摘    要:
本文报道了不凝集弧菌在食物制品中繁殖与存活情况及其影响的因素。结果表明,在22℃和37℃环境中,不凝集弧菌能在多种食物中繁殖;在16~20小时内可增殖10~4~10~(15)倍;在4℃,该菌不繁殖或低度繁殖。不凝集弧菌对营养要求不高,适应的pH值范围较广,含盐量要求不严格,如在pH5.5~8.5,含盐量为0~6.5%的食物中均可生存、繁殖,在干枯的虾,腐败的鱼中亦能生存多日。

Abstract:
This paper reports the study of the conditions and relevent factors about the multipllcaion and survival of non-agglutinable vibrios (NAG) in seven kinds of cooked foods.The results of the experiment showed that the organism NAG multiplied in many kinds of foods.Under the temperature conditions at 22 degrees centigrade and 37 degrees centigrade,they multiplied as 144-1015 times as they were in the initial state within.16-20 hours.While under 4 degrees centigrade multiplication reduced to very low extent.The organism did not require good nutrition supply.The range of pH values adequate for the reproduction of this organism was wide (about 5.5-8.5) and it was sufficient if the content salt was in the range 0-6.5%.Under such conditions NAG survived and multiplied over 20 days or more.In dry lobsters and corrupt fish,they survived for many days.
