| 摘 要： | 本用鸡蛋白糕作载体，给５３名小学生每人每天补育锌元素６ｍｇ，３个月后其身高的增加值是５３名实验对照组（给不强化蛋糕）和７３名空白对照组（不给蛋白糕的１．２倍，体重的增加值是后两组的１．３和１．４倍，发锌的增加分别是后两组的１．８和３．４倍，血清锌的增加也明显高于后两组，同时锌强化实验组学生的血红蛋白含 量也明显增加，证明适量的锌营养强化可以增进学龄儿童的生长发育和锌铁营养水平。 |

| Abstract: | The effect of zinc fortification was examined in 53 pupils received ordinary diet with 6 mg zinc daily fromzinc - fortified sponge cake (treated group). 53 pupils received ordinary diet with regular sponge cake (strictcontrol group). and 73 pupils received ordinary diet only (control group). During the observation period of 3months. height increment of treated group was 1. 2 times that of control groups. increment of weight in treated group was greater than in strict control group (1. 3 times) and in control group (1. 4 times). Increment ofhair zinc in treated group was 1. 8 and 3. 4 times as much as in control groups. respectively. Serum zinc increment of treated group was greatest among all groups. Hernoglobin content of treated group increased remarkably. It is proved that zinc fortification of foods can be a means for improvement of growth and nutritional status of zinc and iron among schoolchildren |
