1起亚硝酸钠引起的食物中毒调查

[目的]调查1起食物中毒,提出预防措施,保障人们的身体健康。[方法]2010年4月对招远市某酒店发生的食物中毒进行流行病学调查和实验室检测。[结果]某单位集体就餐者40人,39人出现头晕、恶心症状,罹患率为97.5%。从就餐者吃剩的海参煲中检出严重过量的亚硝酸盐[（3.2-3.3）×10^3/mg/kg]。[结论]这是1起由亚硝酸钠引起的食物中毒。

Investigation on a Food Poisoning Caused by Sodium Nitrite

[Objective] To investigate a food poisoning,propose the preventive measure,so as to safeguard people＇s health.[Methods]An epidemiological investigation and laboratory examination was made on the food poisoning which occurred in a hotel of Zhaoyuan city in April,2010.[Results]39 persons had dizziness and disgusting symptom in the collective meal of 40 persons.The rate of sickness was 97.5%.The serious excessive nitrite was determined from the seacucumber soup remained（3.2-3.3）×10^3 mg/kg.[Conclusion]This is a food poisoning caused by sodium nitrite.
