摘    要:
食品是人类生活中不可或缺的必需品。食品安全问题一直是人们关注的热门课题。在食品生产过程中往往需要添加防腐剂、抗氧化剂、人工合成色素、甜味剂、保鲜剂等化学物质,其过度使用及不合理利用对人体健康不利。除生产以外,食品在包装、运输和储藏过程中能会被化学物质污染,危害人体健康。食品安全监测面临着严峻挑战,因此急需建立快速调查食源性疾病和监测食品污染的措施和方法。近年来高效液相色谱分析法在食品分析中的应用日益增多,它比化学分析法操作简便、快速,并能提供更多有价值的信息。本文就高效液相色谱(HPLC)技术在食品安全检测方法中的应用概况作一综述。

Abstract:
Food is an essential element in human life.The security problem of it became the focus what was concerned by the society.In the food production process,it often need to add preservatives,antioxidants,artificial colorings,sweeteners,preservatives and other chemicals,these excessive and unreasonable use do bad to humans' health.Besides the production,food also can be contaminated in the packaging,transport and during storage by chemicals and hazards to human health.Food safety monitoring is facing severe challenges,it urgent need to establish a set of measures and methods which can quickly investigate food borne diseases and food contamination monitoring.In recent years,high-performance liquid chromatography in food analysis applications area has increased,it is more simple and fast than chemical analysis method and can provide more valuable information.The application profiles of HPLC method in food safety testing technology were introduced in the paper.
