摘    要:目的应用模糊综合法对某大型餐饮企业进行卫生学评价,为行政部门审核提供技术依据。方法根据深圳市餐饮服务许可办法的相关要求,采用模糊综合评价法进行卫生学评价。结果用该方法对某大型餐饮企业进行卫生学评价的得分为8.14分,该餐馆的卫生等级为B级。结论模糊综合评价的结果反映了餐饮企业的整体卫生状况,是一种全面、客观的卫生学评价方法。

Abstract:Objective To evaluate the catering enterprise and provide technical basis of quality supervision departments for the health examination.Methods According to the corresponding requirement of catering service permission in Shenzhen,fuzzy comprehensive evaluation method was applied in the hygiene evaluation.Results The score of the hygiene evaluation was 8.14 and the hygiene level of the large catering enterprise was B by the method.Conclusion The evaluation result reflects the whole hygiene condition of the catering enterprise,the fuzzy comprehensive evaluation method is a comprehensive and objective hygiene evaluation method.
