摘    要:啤酒花是桑科葎草属植物啤酒花的未成熟带花果穗,广泛用于酿造业以增加啤酒香气及苦味。该文结合相关文献,对啤酒花的化学成分(树脂类、挥发油、多酚、多糖等)及药理活性研究作一简单概述,为之后进一步的开发研究提供依据和参考。

Abstract:Hops, the female inflorescences of the hop plant (Humulus lupulus), are widely used in the brewing industry to add bitterness and aroma to beer. Combining with the relevant literature, the chemical composition(resinae, volatile oil, polyphenol and polysaccharide) in hops and their pharmacological effects are reviewed in this paper so as to present some sights for further application research and development.
