中山市市售猪肉(含猪内脏)残留禁用化学药品的现状及控制的研究

目的 掌握中山市市售猪肉（含猪内脏）受禁用化学药品污染的现状，提出相应的预防和控制措施，方法 采用分层按比例抽样的方法，分别对中山市的港口镇，三乡镇，沙溪镇，小榄镇，石岐城区共80份市售猪肉（含猪内脏）进行调查，采用气质联用法（GC/MS）检测，鉴别其中含有禁用化学药品的成分。结果 此次调查80个样品共检出禁用化学药品有3种，残留阳性样品5个，总残留阳性率为6.3%。其中盐酸克仑特罗阳性检出率为5.0%，N，N-二甲基硫脲和甲巯基咪唑阳性检出率均为1.3%。盐酸克仑特罗阳性样品全部来自小榄镇，N，N-二甲基硫脲和甲巯基咪唑阳性样品则来自石岐城区，港口镇，三乡镇，沙溪镇均未检出阳性样品，结论 中山市市售猪肉（含猪内脏）残留的禁用化学药品主要是盐酸克仑特罗，但也检出了N，N-二甲基硫脲和甲巯基咪唑，禁用化学药品只在部分区域内检出，因此首要任务是加强对盐酸克仑特罗的监测，同时也要警惕其它禁用化学药品的存在，在对全市的生猪市场进行监测管理时，应着重管理存在问题的地区。

Situation and Control of Illegal Chemicals Residual in Pork (Including Entrails) in Zhongshan City

Objective To determine the situation of illegal chemicals residual in pork (including en trails) and to recommend control and prevention measures.Methods Using stratified proportional sampling, 80 samples of pork (including entrails) were selected from five townships in Zhongshan City. The illegal chemicals were detected by gas chromatography/mass spectrometry (GC/MS). Results Three kinds of illegal chemicals and five positive samples were detected out in 80 samples. The positive rates of Clenbuterol, N, N-dimethyl-thiourea, Methimazole were 5.0%, 1.3% and 1.3% respectively. All positive Clenbuterol samples were from one township and other two kinds of positive samples were from another township. No positive samples were found in the rest three townships. Conclusion Clenbuterol was the main illegal chemical in pork in Zhongshan city. Clenbuterol and other chemicals administration in the pig markets should be strengthened.
