烟台市市售水产品中谷氨酸单钠盐含量及居民膳食暴露量分析

摘    要:目的 了解水产及其制品来源的谷氨酸单钠盐(monosodium glutamate,MSG)的含量状况,分析居民水产及其制品来源的MSG的膳食暴露水平。方法 2019年2 - 3月间,随机采集7类100份水产及制品样本检测MSG,采用点评估模型计算居民水产及其制品来源的MSG的日暴露量(exposure daily intake,EDI)。结果 水产及其制品中普遍含有MSG,抽检样品检出率97%,均值为7.246 g/kg,水产制品中的MSG含量远远高于鲜活类水产品,水产制品中MSG多为后期加工添加所致,其鲜活个体内所含MSG为本底值。儿童、青少年水产品来源的MSG的EDI高于其他各组,不同人群各分组水产品来源的MSG的EDI均远低于30 mg/kg·bw·d建议值。结论 居民水产品来源的MSG的EDI均处在可接受安全水平。建议全面开展MSG膳食暴露量研究,评价其安全性。

Abstract:The study aimed to understand the content of monosodium glutamate(MSG) in aquatic products in Yantai city and access the dietary exposure level of it. Methods 100 samples belonged to 7 kinds of aquatic products were randomly sampled from markets during February to March of 2019. The monosodium glutamate content of the aquatic products sold in market was tested, and the exposure daily intake sourced from it was calculated by point estimate model.Results The aquatic products were generally containing monosodium glutamate, the positive test rate was 97% among 100 samples, and the mean value of monosodium glutamate was 7.246 g/kg. The monosodium glutamate content in aquatic products was much higher than that in fresh aquatic products, which illustrated the most of monosodium glutamate in aquatic products was added from later processing. The exposure daily intake value of children and adolescents was much higher than that of each other groups, but the value of exposure daily intake of each groups was much lower than 30 mg/kg?BW?d recommend by European Food Safety Authority. Conclusion The EDI of MSG from aquatic products in residents are at acceptable safe levels. It is total diet studies that would be recommended to study monosodium glutamate dietary exposure and access its health risk.
