鸡卵壳粉的制作及主要成分含量测定

摘    要:目的了解鸡卵壳粉中主要成分的含量。方法选用普通鸡蛋壳经处理制成生、熟卵壳粉,对自制生、熟鸡卵壳粉分别进行钙、氨基酸含量的测定,并对经人工胃、肠液处理过的生、熟鸡卵壳粉进行钙和氨基酸含量的测定,并与经人工胃、肠液处理过的葡萄糖酸钙、碳酸钙、乳酸钙的钙含量进行比较。结果 1 g生蛋壳中含钙331 mg,含氨基酸65.2 mg,1 g熟蛋壳中含钙316 mg,含氨基酸5.1 mg。生卵壳粉和熟卵壳粉经人工胃肠液消化后的总钙量和碳酸钙分别与葡萄糖酸钙、乳酸钙之间差异有统计学意义(均P〈0.01)。生、熟卵壳粉经人工胃液、肠液消化后氨基酸总含量结果分别为9.314和9.151 mg/g。结论鸡卵壳粉是一种含有氨基酸和钙的有机物,具有钙含量高的特点。

Abstract:[ Objective ] To understand the contents of main components in the eggshell powder. [ Methods ] Raw and cooked eggshell powders were produced with the ordinary eggshell. The contents of calcium and amino acid in raw and cooked eggshell powders were determined. The contents of calcium and amino acid in raw and cooked eggshell powders which were treated with artificial gastric juice and intestinal juice were determined, and the results were compared with the contents of calcium in calcium gluconate, calcium carbonate and calcium lactate samples which were treated with artificial gastric juice and intestinal juice. [ Results] There were 331 mg calcium and 65.2 mg amino acid in 1 g raw eggshell powder, while 1 g cooked eggshell powder contained 316 mg mg calcium and 5.1 mg amino acid. After treating with artificial gastric juice and intestinal juice, the total calcium content and calcium carbonate content in raw and cooked eggshell powders were respectively higher than those in calcium gluconate and calcium lactate, and the differences were statistically significant ( all P 〈0.01 ]. After treating with artificial gastric juice and intestinal juice, the total content of amino acid in raw and cooked eggshell powder was 9. 314 mg/g and 9. 151 mg/g respectively. [ Conclusion] Eggshell powder is a kind of organic matter which contains the calcium and amino acid, and has the characteristics of the high calcium content.
