肉制品中亚硝酸盐含量的检测与分析

摘    要:目的:测定肉制品中亚硝酸盐含量,以了解山西省亚硝酸盐使用现状。方法:依据GB 5009.33-2010《食品中亚硝酸盐与硝酸盐的测定》检测。结果:共检测165份肉制品,平均检出率83.6%,平均超标率为2.42%。结论:应加强对畜类肉制品中亚硝酸盐的监控力度,以确保消费者能购买到卫生安全的食品。

Abstract:Objective:To understand the situation of nitrites usage in Shanxi,and detect the nitrites content in meat product.Methods: Detection was done based on GB 5009.33-2010 "Nitrite and Nitrate Determination in Foods".Results: 165 meat product samples were detected,the average detection rate was 83.6%,the average superstandard rate was 2.42%.Conclusion: It is supposed to strengthen the supervisory control of nitrites content in livestock product,to ensure that consumers can purchase clean and safe food.
