2004年海安县城区部分食品从业人员卫生知识、信念与行为调查

[目的]了解海安县食品从业人员的卫生知识、信念、行为状况及其影响因素，探讨对食品从业人员健康教育和提高培训质量的方法。[方法]2004年11月，在海安县城区抽取部分食品生产、经营单位和个体食品摊（店）的从业人员进行问卷调查。[结果]调查983人，卫生知识平均知晓率为73．6％，平均行为形成率为60．0％，平均卫生态度正确回答率为85．7％；卫生知识知晓率，餐饮业、集体食堂、食品厂家、食品商店人员分别为80．7％、78．4％、79．0％、71．4％，集贸市场人员为43．0％。[结论]海安县城区食品行业从业人员的卫生知识知晓率、卫生行为形成率偏低，但卫生态度正确回答率较高。

Subject Investigating Hygienical Knowledge,Convictions and Actions for Partial Food Shop Employees in Haian county in 2004

[Objective]To understand hygienical knowledge,convictI ons, action conditions and their influence elements of food shop employees in Haian. To opproach the way of health educations and raising training quality for food shop employees. [Methods]Partial shop employees at food production,business units and personal food shops were investigated in questionaires in Haian. [Results]The average rate of knowing the hygienical knowledge among 983 persons was 73.6 percent. Average actions for marion rate was 60. 0 percent. The correct answering rate of average hygienical attitude was 85.7 percent. The rate of knowing hygienical knowledge is 80.7 percent, 78.4 percent, 80.0 percent, 71.4 percent respectively among catering trades, messhalls,food factories and food shops erfiployees. The rale of knowing hygienical knowledge was 43.1 percent for the market persons. [Conclusion]The rate of knowing hygienical knowledge and the rate of hy gienical actions for mation were too low. But the rate of hygienical attitude correct answering was much higher.
