2011年北海市海产品污染状况

摘    要:目的了解北海市海产品污染状况。方法采集北海市市售海产品共90份进行重金属(铅、无机砷、镉、总汞)、甲醛、食源性致病菌(霍乱弧菌、副溶血性弧菌、沙门菌、单增李斯特菌、创伤弧菌和金黄色葡萄球菌)等项目的检测。结果在所检测的90个样品中,合格率为46.7%。铅、无机砷、镉、总汞、甲醛、食源性致病菌的合格率分别为93.3%、94.4%、65.6%、100.0%、94.4%、80.0%,铅、无机砷、镉、总汞的检出率分别为82.2%、54.4%、87.8%、98.9%,甲醛仅在甲壳类干制品中检出。90份样品中共检出副溶血性弧菌18株。结论结果显示,重金属在海产品中存在不同程度的积累,对人体健康存在潜在的威胁。且海产品中存在一定程度的致病菌污染,可能是导致食源性疾病的高危食品。

Abstract:Objective]To understand the contamination situation of seafood in Beihai City.Methods]90 seafood samples were collected from markets in Beihai City to detect the heavy metals(lead,inorganic arsenic,cadmium and total mercury),formaldehyde,food borne pathogens(Vibrio cholerae,Vibrio parahaemolyticus,Salmonella,Listeria monocytogenes,Vibrio vulnificus and Staphylococcus aureus).Results]Among 90 samples,the qualified rate was 46.7%.The qualified rate of lead,inorganic arsenic,cadmium,total mercury,formaldehyde and food borne pathogens was respectively 93.3%,94.4%,65.6%,100.0%,94.4% and 80.0%.The detection rate of lead,inorganic arsenic,cadmium and total mercury was respectively 82.2%,54.4%,87.8% and 98.9%.Formaldehyde was found in dry shellfish products.A total of 18 strains of Vibrio parahaemolyticus were isolated from 90 samples.Conclusion]It is found that there is different degree of heavy metal accumulation in seafood,which has potential threats to human health.The seafood polluted by pathogens is the high risk food of food borne disease.
