| 摘 要： | 目的了解食物中毒发生经过及原因,为此类事件的预防和监督管理提供参考。方法采用现场流行病学调查、病例对照研究及实验室检测等方法进行调查分析。结果本次食物中毒发病51例,罹患率28%,死亡1例,平均潜伏期1.5 h;"冰糖粉"、吃剩的八宝饭、患者呕吐物及死者的胃内容物均检出亚硝酸盐。中毒为食用被亚硝酸盐污染的八宝饭等食品所致结论本中毒事件为亚硝酸盐污染八宝饭等食品所致,提出了预防类似食品中毒的监督管理和预防控制措施。 |

| Abstract: | Objective To understand the process and causes of the food poisoning accident,and to provide reference for prevention and supervision of further similar events.Methods Field epidemic investigation,case comparison study and laboratory testing were applied for the survey and analysis.Results A total of 51 persons were poisoned with a rate of 28%;one person was died and the average latent time was 1.5 h.The nitrite was detected from the "Rock Sugar Powder",residual "Eight Treasure Gruel",and things of patients’ vomiting and stomach contents of the dead.Conclusion This food poisoning event was derived from the contamination of nitrite,measures of food supervision and prevention were put forth timely. |
