鲜活水产品氨基酸成分分析及营养评价

摘    要:目的对鱼类、贝类、甲壳类、藻类等鲜活水产品的氨基酸组成及含量进行分析评价,为水产品合理利用提供依据。方法采用日立L-8900全自动氨基酸分析仪对36种鲜活水产品进行氨基酸成分分析,采用氨基酸评分法(AAS、RC、SRC)对水产品中的营养价值进行了评价。结果水产品中氨基酸种类齐全,均含18种氨基酸,包含8种人体必需氨基酸。甲壳类氨基酸比值系数分91.70,最为接近理想模式。鱼类赖氨酸平均含量最高,是理想模式的1.73倍;贝类胱氨酸+蛋氨酸,异亮氨酸符合理想模式;藻类亮氨酸符合理想模式,胱氨酸+蛋氨酸仅为理想模式一半。结论水产品具有较高的营养价值,不同种类水产品氨基酸组成有较大差异,可据此构建合理膳食。

Abstract:OBJECTIVE To analyze and evaluate amino acid composition and content of fresh aquatic products such as fish,shellfish,crustaceans and algae,so as to provide basis for rational utilization of aquatic products.METHODS Using Hitachi L-8900 automatic amino acid analyzer of 36 kinds of fresh aquatic products by amino acid composition analysis,the amino acid score(AAS,CS,EAAI)on nutritional value of aquatic products was evaluated.RESULTS There were 18 kinds of amino acids in aquatic products,including 8 kinds of essential amino acids for human body.The ratio coefficient of crustacean amino acids was 91.70,which was the closest to the ideal model.The average lysine content of fish was the highest,which was 1.73 times of the ideal model;shellfish cystine+methionine,isoleucine accorded with the ideal model;algae leucine accorded with the ideal model,cystine+methionine was only half of the ideal model.CONCLUSION Aquatic products have high nutritional value and different kinds of aquatic products have great differences in amino acid composition,which can be used to construct a reasonable diet.
