摘    要:重金属对食品的污染可以通过食物链进入人体后,干扰机体的正常功能,给人体健康带来严重的危害。作者主要综述铅、镉、汞3种有毒重金属对食品的污染及其来源、对人体的危害及其预防,进一步为食品安全提供依据。

Abstract:Heavy metal can enters the human body through the food chain, and interfere the normal functions of the body, brings serious harm to human health. The author summarizes three kinds of toxic heavy metals ( lead, cadmium and mercury ) pollution in food and their sources, harm to human body and prevention, so as to provide the basis for food safety.
