2005-2007年衢州市食品中食源性致病菌监测

摘    要:目的为更好地开展食品安全性研究和预防控制食源性疾病的发生,对衢州市部分食品进行食源性致病菌污染状况的调查,初步确定可能被污染的高危食品,为食物中毒监测提供科学依据。方法参考国家标准方法 ,采用进口CHROMagar显色培养基,对样本进行食源性致病菌的分离、生化鉴定。结果 2005-2007年共检测食品样品323份,检出致病菌67株,总检出率20.74%;其中检出金黄色葡萄球菌19株,检出率为16.24%(19/117);其次为单增李斯特菌检出27株,检出率为8.36%(27/323);沙门菌检出16株,检出率为4.95%(16/323);副溶血性弧菌检出5株,检出率12.20%(5/41);未检出EHEC O157∶H7。结论本研究显示衢州市居民主要消费食品存在食源性致病菌污染,其中水产品、生肉类食品和散装熟肉是主要污染食品品种。通过检测,为衢州市食品安全预警提供可靠数据。

Abstract:Objective To analyze food contaminated pathogens and their distribution characteristics.Methods From 2005 to 2007,323 food specimens were randomly selected from supermarket,which included raw meat,cooked meat,seafood and vegetables.Following the national standard procedures,the specimens were tested for food-borne pathogens with CHROMagar and API biochemical reaction plates.Results Bacterial pathogens were isolated from 67(21%)food specimens.The contaminated bacterial pathogens included staphylococcus aureus(16%,19/117),salmonella(5%,16/323),Listeria monocytogenes(8.4%,27/323)and vibrio parahaemolyticus(12%,5/41).The bacterial pathogens were existed in all different food specimens.There was no EHEC O157∶H7 confirmed in the period.Conclusion There were serious contamination problems of bacterial pathogens.It is necessary to provide additional food hygiene training for the staff working in food industry and strengthen the effort of food monitoring.
