深圳市龙华街道中小型餐饮业从业人员卫生知识现况及影响因素分析

摘    要:目的为了解龙华街道餐饮业从业人员卫生知识水平及探索其影响因素。方法采用一般情况调查表和《深圳市食品卫生知识培训考试试卷》对深圳市龙华街道中小型餐饮业从业人员共1126人进行调查。结果调查对象中,厨师类人员712人(63.2%),服务员类人员414人(36.8%),持有有效的卫生知识培训合格证占79.5%。调查对象卫生知识合格率为64.2%。多因素Logistic回归分析结果显示,高受教育程度(OR=3.415)、工作年限长(OR=5.166)、持有有效的卫生知识培训合格证(OR=6.904)、6个月内接受过卫生知识培训(OR=12.756)、中型餐饮单位(OR=4.288)的从业人员卫生知识合格率较高。结论餐饮业从业人员卫生知识水平较低;小型餐饮业、低受教育程度、未持有效卫生知识培训合格证、新近从业且未接受或较少接受卫生知识培训的从业人员是今后工作的重点。

Abstract:Objective To investigate the health knowledge level and its influencing factors of the employees of the small and medium-sized catering enterprises in Longhua Street,Shenzhen City.Methods 1126 employees who worked in the small and medium-sized catering enterprises were investigated by questionnaires about health knowledge and influencing factors.Results Of the employees,712(63.2%) were cooks and 414(36.8%)were waiters.79.5% had valid certificate of health knowledge training.The eligible rate of health knowledge was 64.2% among the employees.The multi-logistic statistics suggested the employees who had "higher education level"(OR=3.415),"longer work experience engaged in the catering enterprises"(OR=5.166),"valid certificate of health knowledge training"(OR=6.904),"health knowledge training in recent 6 months"(OR=12.756) and "worked in the medium-sized catering enterprises"(OR=4.288),had higher level of health knowledge.Conclusion The health knowledge level was low among the employees of the small and medium-sized catering enterprises.Health education should focus on the employees who worked in small-sized catering enterprises,had low educational level,were without valid certificate of health knowledge and didn't had or had less the training of health knowledge.
