摘    要:目的探讨气相色谱法检测食品中反式脂肪酸的含量。方法应用气相色谱法对几种市售油脂产品的反式脂肪酸的含量进行测定分析。结果顺、反式脂肪酸的分离良好,检测出人造黄油中反式脂肪酸的含量为9.9%~14.3%,人造奶油中反式脂肪酸的含量为12.8%。结论利用气相色谱法检测反式脂肪酸准确、可靠、简捷,可作为检测食品中反式脂肪酸含量的推广方法。

Abstract:Objective To investigate the content of trans fatty acid in food by using gas chromatography. Methods The contents of trans fairy acid in several kinds of fat products were determinated and analysed by using gas chromatography. Results The trans - and cis - fatty acids were separated with each other, and the result showed that the contents of trans fatty acid were 9.9% - 14.3% in butter and 12.8% in cream. Conclusion Gas chromatography has the advantages of simplicity, repeatability and sensitivity, and it can be used for detecting trans fatty acids in food in many laboratories.
