This study examines the frequency of intake of fruits and vegetables among a sample of adolescents in the city of Tehran and the relationship of some behavioral, cognitive, personal, and environmental factors to low fruit and vegetable intake in this group. The study sample included 834 9th, 10th, and 11th grade student adolescents aged 14-19 years. The survey instrument was a structured self-administered questionnaire that consisted of several sections on demographic and social characteristics, perceived weight status, perceived health status, physical activity, food choices, and a 50-item qualitative food frequency questionnaire.

Less than daily consumption of vegetables and fruits was reported by 18% and 27% of adolescents, respectively. A significant association was found between gender and low vegetable but not fruit intake. Psychosocial and behavioral risk factors associated with inadequate fruit and vegetable intake included low self-efficacy, external locus of control, self-perception of health as fair or poor, and not having a regular exercise program.  相似文献

BACKGROUND: This study aims to identify correlates of fruits and vegetables from within the domains of personal factors (taste preferences, health/nutrition attitudes, weight/body concerns, and self-efficacy), behavioral factors (meal frequency, fast food intake, and weight control behaviors), and socio-environmental factors (social support for healthy eating, family meal patterns, food security, socio-economic status, and home availability of fruits/vegetables). This study further aims to identify correlates of home availability and taste preferences for fruits/vegetables, and to explore patterns of interaction between availability and taste preferences. METHODS: The population included 3957 adolescents from 31 public middle and high schools in Minnesota. Structural equation modeling was used for model testing. RESULTS: The strongest correlates of fruit/vegetable intake were home availability of fruits/vegetables and taste preferences of fruits/vegetables. The final model explained 13% of the variance in fruit/vegetable intake, 45% of the variance in home availability, and 28% of the variance in taste preferences. Correlates of home availability included social support for healthy eating, family meal patterns, family food security, and socio-economic status. Correlates of taste preferences included health/nutrition attitudes and home availability of fruits/vegetables. A test of interaction effects indicated that when home availability of fruits/vegetables was low, intake patterns did not differ, regardless of taste preferences. In contrast, even when taste preferences for fruits/vegetables were low, if fruits/vegetables were available, intake increased. CONCLUSIONS: Interventions to increase fruit/vegetable intake in adolescents need to target socio-environmental factors such as greater availability of fruits/vegetables.  相似文献

The purpose of the study was to examine fruit and vegetable intake patterns among American Indian and Alaska Native adolescents and to assess psychosocial factors and health behaviors related to inadequate consumption. The study was conducted in nonurban schools from eight Indian Health Service Areas in the U.S.A total sample of 13,454 7th- through 12th-grade American-Indian and Alaska-Native youths living on or near reservations were given, in classroom settings, a revised version of the Minnesota Adolescent Health Survey.The health questionnaire assessed fruit and vegetable consumption patterns and psychosocial variables and health-related behaviors. The results indicated that fruit and vegetable consumption was below the recommended amounts. Less than daily consumption of vegetables was reported by 30% of adolescents and less than daily consumption of fruits was reported by 20% of youths. Psychosocial and health behavior risk associated with inadequate intake included being overweight, low family connectedness, poor school achievement, poor perceived health status, and tobacco use. Our study shows that fruit and vegetable consumption is low among American-Indian and Alaska-Native youths. More attention needs to be placed on developing culturally appropriate interventions to promote healthy eating patterns and addressing factors related to inadequate intake.  相似文献

Nutritious diets that include sufficient intake of fruits and vegetables promote health and reduce risk for chronic diseases. The 2005 Dietary Guidelines for Americans recommend four to 13 servings of fruits and vegetables daily for energy intake levels of 1,000 to 3,200 kcal, including seven to 13 servings for 1,600 to 3,000 kcal/day as recommended for adults aged ≥25 years. The 2006-2007 Washington Adult Health Survey, a cross-sectional study designed to measure risk factors for cardiovascular disease among a representative sample of Washington State residents aged ≥25 years, included a food frequency questionnaire (FFQ). The FFQ included approximately 120 food items and summary questions for fruits and vegetables that were used to compute energy intake and two measures of fruit and vegetable intake. Measure 1 was computed as the sum of intake of individual FFQ fruit and vegetable items; Measure 2 combined the summary questions with selected individual FFQ fruit and vegetable items. Depending on the measure used, approximately 14% to 22% of 519 participants with complete information met the guidelines for fruits, 11% to 15% for vegetables, and 5% to 6% for both fruits and vegetables. Participants aged ≥65 years and women were more likely to meet recommendations, compared with younger participants and men. Despite decades of public health attention, the vast majority of Washington State residents do not consume the recommended amount of fruits or vegetables daily. These findings underscore the need for developing and evaluating new approaches to promote fruit and vegetable consumption.  相似文献

OBJECTIVE: To validate a method for assessing fruit and vegetable intake among adults in a population of low intake. The method assesses mean intake and ranks individuals by their usual intake. DESIGN: A precoded fruit and vegetable Questionnaire included a 24-h recall and a food frequency. The participants filled in the Questionnaire, a week later they started a 7-day food record, 1-day weighed record and 6 days using household measures. SUBJECTS: Following advertisements 40 participants were recruited, 36 returned food records(mean age=37 years). RESULTS: No difference was observed between the average intake yielded by the 24-h recall and that from the 1-day weighed food record of fruits or vegetables. Correlation coefficients between results from the food frequency questionnaire and the 7-day food records were 0.45 (P=0.007) for vegetables, 0.63 (P<0.001) for fruits and 0.73 (P<0.001) for fruits and vegetables combined. Cross-classification into quartiles showed that the proportion of participants in the same or the adjacent quartile of the intake distribution were 94% for fruit intake and 80% for vegetable intake. Registered intake of fruits and vegetables was higher the first 4 days of the record than the last 3 days (P=0.002). The 4-day food record correlated with the food frequency questionnaire in similar manner as the 7-day record. CONCLUSION: The present study indicates that the precoded 24-h recall may be valuable tool for measuring average intake of fruits and vegetables among adults in a population of low intake. Moreover, the food frequency questionnaire was valid for ranking individuals according to their usual intake. A 4-day food record might be sufficient when validating food frequency questionnaires for fruits and vegetables.  相似文献

OBJECTIVE: Examine the role of food spending behaviors and perceptions on fruit and vegetable intake among preadolescent children and their parents. DESIGN: Cross-sectional study. SETTING: Metropolitan city. PARTICIPANTS: Five hundred fifty-five parent/child dyads participating in the PARADE study. More than 50% of participants were African American and nearly 40% of households were low income. VARIABLES MEASURED: Body mass index calculated from child anthropometric data and parents' self-reported height and weight. Adult and child fruit and vegetable intake, annual household income, and food purchase behavior and perceptions obtained from parent questionnaire. ANALYSIS: Analysis of variance used to identify differences in means at P<.05 level. RESULTS: No statistically significant differences in fruit and vegetable intake by income status were observed. Children in households spending the least per week on groceries consumed fewer daily fruits and vegetables. Perceptions of cost of fruits and vegetables were also found to be significantly associated with fruit and vegetable intake among children and parents. CONCLUSIONS AND IMPLICATIONS: Public health efforts to raise awareness of the relatively low cost of fruits and vegetables should be continued. These efforts may be complemented with policy strategies that make fruits and vegetables more viable options for low-income households.  相似文献

Influences on food choices are multifactorial, and limited research has been reported on the role of social-psychological variables. Earlier studies have linked self-esteem with a variety of health behaviors. The purpose of this study was to extend the research to examine the relationship of self-esteem to dietary behaviors, specifically the intake of fruits and vegetables and their key nutrients. Subjects were 155 married couples in a stratified random sample of households in one mid-western state. Husbands and wives were interviewed separately in their own homes. Independent variables were age, education, income, body mass index, and self-esteem.The dependent variables were number of servings and variety of vegetables and fruits per week and energy-adjusted intakes of fiber, folate, and vitamins A and C. Self-esteem was measured by the Rosenberg questionnaire, while dietary intake was assessed by a semiquantitative food frequency questionnaire. Women reported significantly more servings of fruits per week, greater variety in both fruit and vegetable choices, and higher energy-adjusted nutrient intakes than did their husbands. Women met Food Guide Pyramid (FGP) recommendations for fruit intake and approached the recommendation for vegetable servings. Men fell short of FGP recommendations for both fruit and vegetables. After adjustment for age, education, income, and body mass index, self-esteem was a significant predictor of vitamin C and folate intake among women and folate intake among men. No other dietary variables were associated with self-esteem, although for men there was a trend for increased weekly servings of vegetables and increased variety in vegetable choices with higher self-esteem. One implication for practice is that age and education appear to be far stronger factors contributing to fruit and vegetable intake than is self-esteem. Additional research is needed to clarify the strength of self-esteem as a factor in specific food choices, especially among subpopulations.  相似文献

OBJECTIVE: This study sought to explore home food availability and common settings of food consumption as correlates of fruit, vegetable, and fat intake among a sample of non-Hispanic black and non-Hispanic white adolescents. PARTICIPANTS AND DESIGN: Adolescents (n=144 black, 84 white) and their parents completed a cross-sectional survey in an urban adolescent health clinic. The adolescent survey included screening measures for fruit, vegetable, and fat intake and items on frequency of eating meals with family, while watching television, and at three types of restaurants. Parents provided information on home availability of foods. MAIN OUTCOMES: Correlates of fruit, vegetable, and fat consumption. STATISTICAL ANALYSIS: Spearman correlations for associations among variables, t tests for mean comparisons, and multiple stepwise regression conducted separately for black and white adolescents. RESULTS: In multiple regression, home availability was not significantly associated with fruit, vegetable, or fat intake except for fruit intake among white adolescents only. Use of non-fast-food restaurants was the strongest positive predictor of vegetable intake. For both black and white adolescents, fast-food and buffet restaurant use and eating while watching television were the strongest predictors of fat intake. CONCLUSIONS: Compared with restaurant use and eating while watching television, home availability had a relatively small impact on fruit, vegetable, and fat consumption for both black and white adolescents. Intervention programs on adolescent nutrition should target not just availability of healthful foods, but also ease of access, such as the preparation of fruits and vegetables so that they are flavorful and ready to eat.  相似文献

OBJECTIVE: This exploratory study examined how estimates of one's fruit and vegetable intake in childhood are related to 3 current dietary behaviors among African American women: intake of fruits and vegetables, exposure to and preference for fruits and vegetables, and preference for trying new foods. DESIGN: Baseline data from a randomized dietary intervention trial. Setting: Ten urban public health centers in St. Louis, Missouri. PARTICIPANTS: 1227 African American women. Variables Measured: A 33-item fruit and vegetable food frequency questionnaire, items measuring estimates of childhood fruit and vegetable intake, adult fruit and vegetable intake, exposure to and preference for fruit and vegetable, and preference for trying new foods. ANALYSIS: Linear regression evaluated the association between predictors and continuous measures; logistic regression determined the association between predictors and categorical measures. RESULTS: Estimates of one's vegetable intake as a child were significantly related to exposure and preference for both fruits and vegetables, trying of new foods, and intake of both fruits and vegetables in adulthood. Estimates of eating fruit as a child were not significantly associated with these adult dietary behaviors. CONCLUSIONS AND IMPLICATIONS: Developmental influences on adult dietary patterns may be stronger for vegetables than fruits among African American women. Additional emphasis is needed regarding exposure to and preference for vegetable intake in childhood.  相似文献

BACKGROUND: Simple screening tools to identify intake of fruit, vegetables and fat are necessary to design effective public health intervention strategies in order to increase intake of fruit and vegetable and to reduce fat intake. METHODS: 108 men recorded their food intake for 14 days and filled in a 27-item food frequency questionnaire (FFQ) 1.5-2 months later. Estimates of fruit, vegetables and fat intake from the FFQ were compared with those from the weighed records. RESULTS: Mean intake of vegetables and fruit estimated from the diet records increased with increasing categories for frequency of intake assessed by the FFQ. Spearman correlation coefficient between frequency of intake of vegetables and fruit from the FFQ and amount of these food items estimated from the weighed records was 0.46 and 0.66, respectively. The ability of the FFQ to predict those having inadequate intake of fruits and vegetables based on weighed record data, was more than 90%. Almost 95% who reported use of fat spreads by the FFQ also reported this by the records. The correlation coefficient between the amount of fat used on bread from the two methods was 0.79. The correlation between fat intake estimated from both methods was 0.36 and for saturated fat intake the correlation was 0.38. CONCLUSION: The FFQ could be used to screen for low consumers of fruit, vegetable and fat spread in intervention programmes. However, the ability of the FFQ to identify persons with high (or low) intake of fat and saturated fat was not good.  相似文献

BACKGROUND: Poor dietary habits may increase risk for obesity and chronic diseases among Canadian adolescents. OBJECTIVES: The aims of the present study were to: (a) establish the patterns of fruit and vegetable intake by Canadian adolescents, and (b) identify the impact of sociodemographic factors-including age, household income, household education, ethnicity, living arrangement, and location-on the pattern of fruit and vegetable intake in this population. DESIGN: This is a cross-sectional study using the data from the Canadian Community Health Survey, Cycle 2.1, Public Use File. The survey used questions similar to a food frequency questionnaire. METHODS: Total fruit and vegetable intake of 18,524 Canadian adolescents (12 to 19 years old) was cross-tabulated between two age groups (12 to 14 years old [n=7,410] and 15 to 19 years old [n=11,114]) by sex, level of household education, total household income, ethnicity, living arrangement, and geographical location. RESULTS: The data revealed that a 38.3% of Canadian adolescents in this study consumed fruits and vegetables five to 10 times per day; fewer older adolescents (15- to 19-year-olds) reported eating fruits and vegetables at that frequency as compared with the younger subgroup (12- to 14-year-olds) (P<0.001). Household education and income independently had a significant (P<0.001) positive impact on fruit and vegetable consumption. Females reported a significantly (P<0.05) higher frequency of intake than did males. Adolescents living in homes with only one parent reported a significantly (P<0.005) lower frequency of intake, as compared with adolescents living with two parents. CONCLUSIONS: These results may help to identify adolescent groups at risk for poor eating habits and support the implementation of programs to encourage higher fruit and vegetable intakes.  相似文献

OBJECTIVE: Fruit and vegetable intake is inversely associated with cancer risk in many epidemiological studies. Accurate assessment of consumption of these foods is difficult, and biomarkers of intake would overcome several drawbacks of currently used dietary assessment methods. Therefore, we investigated the relation between plasma carotenoids and usual vegetable and fruit intake. DESIGN: Plasma carotenoid concentrations were measured and vegetable, fruit and juice consumption was assessed by a food frequency questionnaire (FFQ) in a random sample of 591 Dutch men and women aged 20-59 y from the MORGEN-project, one of the contributions to the European Prospective Investigation into Cancer and Nutrition (EPIC)-study. RESULTS: In this sample of the general Dutch population, in both genders, relative to the other carotenoids, plasma beta-cryptoxanthin was the best indicator for fruit intake, and for the sum of vegetable, fruit and juice intake, while lutein concentrations best reflected intake of vegetables, although quartiles of intake were not consistently separated. Since levels of lycopene were not associated with any of the main food groups examined, associations with total carotenoids improved when excluding lycopene, and monotonously increasing plasma levels were seen for intakes of vegetables, of fruits, and of the sum of vegetables, fruits and juices. Several vegetable types and orange/grapefruit juice were associated with plasma levels of one of the carotenoids. CONCLUSION: Plasma carotenoids were only crude indicators of vegetable and fruit intake as assessed by a FFQ; beta-cryptoxanthin for fruit intake and lutein for vegetable intake. None of the plasma carotenoids could distinguish all four quartiles of vegetables, fruit and/or juice intake.  相似文献

The coronavirus disease 2019 (COVID-19) pandemic has drastically altered food shopping behaviors, and the resulting economic recession has caused a spike in food insecurity. Since food insecurity is associated with poor diet, especially low intake of fruits and vegetables, food-insecure individuals may disproportionately experience negative health impacts related to poor diet during the pandemic. To assess the relationship between food security status and fruit and vegetable intake during the COVID-19 pandemic, we conducted an online survey of adult residents of the US state of Michigan in June of 2020. Among the 484 survey respondents, 36.2% were classified as food-insecure. Food-insecure respondents consumed fruits and vegetables fewer times per day than food-secure respondents and were more likely to report decreasing their consumption of any type of fruits and vegetables (total, fresh, frozen, and canned) since the pandemic started. For those who reduced their purchase of fresh fruit and vegetable, reasons included poor quality, poor availability, high price, reduced store trips, and concerns of contamination. These findings highlight the need for adequate food assistance during the COVID-19 pandemic and in future pandemics, as well as public health messages that promote healthy eating.  相似文献

In 1986–1987, more than 30,000 adolescents completed the Minnesota Adolescent Health Survey, a comprehensive assessment of adolescent health status, health behaviors, and psychosocial factors. Although the survey included relatively few items on nutrition-related issues, a wealth of knowledge about adolescent nutrition was gained. Lessons learned from a decade of subsequent analyses of data collected in the survey and implications for working with youth are summarized in this article. Major concerns identified included high prevalence rates of inadequate intake of fruits, vegetables, and dairy products; unhealthful weight-control practices; and overweight status. For example, inadequate fruit intake was reported by 28% of the adolescents and inadequate vegetable intake was reported by 36%. Among female adolescents, 12% reported chronic dieting, 30% reported binge eating, 12% reported self-induced vomiting, and 2% reported using diuretics or laxatives. Some of the risk factors for inadequate food intake patterns or unhealthful weight-control practices included low socioeconomic status, minority status, chronic illness, poor school achievement, low family connectedness, weight dissatisfaction, overweight, homosexual orientation among male adolescents, and use of health-compromising behaviors. To improve adolescent eating behaviors, the results suggest a need for innovative outreach strategies that include educational and environmental approaches. The aim of this study was to validate the intake of carotenoids, fruits and vegetables estimated by the Food Frequency Questionnaire for Adolescents (FFQA) using the method of triads. Blood samples were collected from 80 elementary school adolescents to assess serum levels of β-carotene. Partial correlation coefficients (r) were calculated between an estimated intake of carotenoids, fruits and vegetables and the serum levels of β-carotene. Validity coefficients were calculated using the method of triads. With the exception of carotenoids, partial r from the food frequency questionnaire (FFQ) were greater than those of the 24-hour recall (24hR). The fruit/vegetable group showed the highest partial r for the FFQ (r = 0.235) and the 24hR (r = 0.137). The highest validity coefficient was obtained for the vegetable group, as assessed by the FFQ (r = 0.873). On average, the validity coefficient values for the FFQ were greater than those obtained for the 24hR or the β-carotene serum levels. The FFQA is an accurate tool for estimating the intake of carotenoids, fruits and vegetables in this population group.  相似文献

Consumption of fruits and vegetables is far lower than recommended. The behavioral affective associations model posits that affective associations influence behavior and mediate the influence of perceived benefits and barriers on behavioral choices. The purpose of this study was to test the model's predictions about the influence of affective associations and benefits/barriers on fruit and vegetable consumption. Community adults (N = 446) reported perceived benefits and barriers to fruit and vegetable consumption, affective associations with fruits and vegetables, and current fruit and vegetable intake. Affective associations predicted behavior and mediated the influence of benefits and barriers on behavior, supporting predictions made by the behavioral affective associations model. This highlights the need to incorporate affective factors in decision-making models and intervention strategies.  相似文献

BACKGROUND: Daily fruit and vegetable consumption in black men is low and has remained relatively unchanged during the past 20 years. OBJECTIVE: To examine awareness of fruit and vegetable recommendations promoted by federal agencies and correlates of fruit and vegetable consumption among an urban and mostly immigrant population of adult black men. DESIGN: A cross-sectional study analyzing baseline data (n=490) from a randomized controlled trial. SETTING: A large health care worker's union. MAIN OUTCOME MEASURES: Knowledge, perceived benefits, stage of readiness, perceived barriers, and daily servings of fruit and vegetable intake. STATISTICAL ANALYSES PERFORMED: One-way analysis of variance and t tests were used to compare fruit and vegetable intake across main study variables. Regression analysis was used to identify independent predictors of fruit and vegetable intake. RESULTS: Fruit and vegetable intake was low (mean was three servings/day). Ninety-four percent were not aware that men should consume at least nine servings of fruits and vegetables daily and 59.8% were not aware that eating a colorful variety is important. In contrast, over half (54.7%) were aware that a single serving is equal to about a handful; 94.1% correctly reported fruit and vegetables as an important source of fiber; 79.6% correctly reported vitamin pills were not a substitute for eating fruits and vegetables; and 94.5% recognized that there are health benefits to eating fruits and vegetables, although identification of specific benefits was minimal. In regression analysis, a greater level of fruit and vegetable consumption was significantly associated with greater knowledge of fruit and vegetable recommendations, lower perceived barriers, and a more advanced stage of change (action vs contemplation/preparation). Perceived health benefits were not associated with fruit and vegetable consumption. CONCLUSIONS: There is a lack of awareness of the current fruit and vegetable recommendations. In addition, men reported fruit and vegetable intakes that were far below national recommendations. Greater efforts are needed to help urban and primarily immigrant black men realize the importance of and recommendations for fruit and vegetable consumption.  相似文献

Higher intake of fruits, vegetables, and antioxidants may help protect against oxidative damage, thus lowering cancer and cardiovascular disease risk. This Washington County, Maryland, prospective study examined the association of fruit, vegetable, and antioxidant intake with all-cause, cancer, and cardiovascular disease death. CLUE participants who donated a blood sample in 1974 and 1989 and completed a food frequency questionnaire in 1989 (N = 6,151) were included in the analysis. Participants were followed to date of death or January 1, 2002. Compared with those in the bottom fifth, participants in the highest fifth of fruit and vegetable intake had a lower risk of all-cause (cases = 910; hazard ratio (HR) = 0.63, 95% confidence interval (CI): 0.51, 0.78; p-trend = 0.0004), cancer (cases = 307; HR = 0.65, 95% CI: 0.45, 0.93; p-trend = 0.08), and cardiovascular disease (cases = 225; HR = 0.76, 95% CI: 0.54, 1.06; p-trend = 0.15) mortality. Higher intake of cruciferous vegetables was associated with lower risk of all-cause mortality (HR = 0.74, 95% CI: 0.60, 0.91; p-trend = 0.04). No statistically significant associations were observed between dietary vitamin C, vitamin E, and beta-carotene intake and mortality. Overall, greater intake of fruits and vegetables was associated with lower risk of all-cause, cancer, and cardiovascular disease death. These findings support the general health recommendation to consume multiple servings of fruits and vegetables (5-9/day).  相似文献

The aim of this study was to assess fruit and vegetable intake among the population of junior high school students. 113 students from Junior High School No. 2 in Ole?nica participated in the research. In order to assess the intake of fruit and vegetables, the method of food frequency questionnaire was used. It was stated that vegetables appearing most frequently in the diet of girls were: tomatoes, carrots, cucumbers and fresh vegetable salads, and in the meals of boys were: tomatoes, fresh vegetable salads, cucumbers and vegetable salads. Boys and girls declared that the most often consumed fruits were: apples, oranges, mandarins and bananas. The mean daily total consumption of fruit and vegetables by the junior high school students was 358.5 g/day. Compared with current dietary recommendations, intakes of fruit and vegetables were too low.  相似文献
