河南省市售鸡肉和鸡蛋中抗生素残留及膳食暴露风险评估

摘    要:目的 了解河南省市售鸡肉和鸡蛋中抗生素残留水平及膳食暴露风险。方法 随机采集河南省10个监测区域的222份样品,按照《国家食品污染和有害因素风险监测工作手册》的相关标准程序检测17种抗生素残留,结合食物摄入量,利用点评估方法对人群鸡肉和鸡蛋膳食中抗生素的暴露风险进行评估。结果 222份样品中,抗生素的总体检出率为14.4%,不合格率为6.76%。8份鸡肉样品中检出禁用氧氟沙星,6份鸡蛋样品中检出禁用甲硝唑、氟苯尼考、恩诺沙星。鸡肉中抗生素的IFS均值为0.000155,最大值为0.00350,鸡蛋中抗生素IFS均值为0.000553,最大值为0.00278,均远远低于1。结论 河南省市售鸡肉和鸡蛋中存在一定的抗生素残留,但暴露风险很低,对人体健康危害处于安全可接受水平。

Antibiotic residues and dietary exposure risk assessment in chicken and eggs sold in Henan Province

Abstract:Objective To investigate the levels of antibiotic residues and dietary exposure risk in chicken and egg products in Henan Province. Methods A total of 222 samples from 10 monitoring areas in Henan Province were randomly collected. In total 17 kinds of antibiotic residues in these samples were detected according to the relevant standard operating procedures of Manual China National Food Contamination and Harmful Factors Risk Monitoring. With the data of resident food intake, the point assessment method was applied to assess the health risk caused by exposure to antibiotics in chicken and egg products.Results The total detection rate of antibiotics in 222 samples was 14.4%, while the unqualified rate was 6.76%. The banned ofloxacin was detected in eight chicken samples, while the banned metronidazole, enroxacin and florfenicol were detected in six egg samples. The average IFS of antibiotics in chicken and eggs were 0.000155 and 0.000553 respectively, while the maximum value were 0.00350 and 0.00278, respectively, both far lower than 1. Conclusion There is certain degree of antibiotic residues in chicken and egg products sold in Henan Province, but the risk of exposure is very low and is at a safe level.
