| 摘 要： | 目的 了解淄博市动物性淡水产品中常见致病性弧菌的污染状况,为监管部门制定防控措施提供依据。方法 选择有代表性的养殖场、销售场所和餐饮店采集淡水鱼、淡水甲壳类和淡水贝类进行4种致病性弧菌的检测。结果 2014年至2017年,淄博市共对332份样品进行了检测,霍乱弧菌检出率27.54%(76/276)、副溶血弧菌检出率23.19%(77/332)、溶藻弧菌检出率6.76%(15/222)、创伤弧菌均未检出。不同年份比较,副溶血弧菌2016年检出率最高为32.14%(45/140);霍乱弧菌2014年和2016年检出率最高,分别为32.89%(25/76)、32.31%(42/130)。副溶血性弧菌、霍乱弧菌和溶藻弧菌在养殖环节、销售环节和餐饮环节均有检出,创伤弧菌在以上采样环节均未检出。结论 淄博市动物性淡水产品不同程度受到致病性弧菌污染,存在食品安全隐患,尤其是销售和餐饮环节存在的污染隐患应加强重视。

| Abstract: | Objective To assess the pollution of 4 pathogenic vibrios in animal fresh water products in Zibo City,so as to provide the basis of prevention and control for supervision department.〖WTHZ〗Methods Representative farms,places of sale,restaurants were chosen to collect freshwater fish,freshwater crustaceans and freshwater shellfish.4 pathogenic vibrios were detected.〖WTHZ〗Results 332 samples were detected in Zibo City from 2014 to 2016,with the detection rates of vibrio cholerae (27.54%,76/276),vibrio parahaemolyticus (23.19%,77/332),vibrio alginolyticus (6.76%,15/222) and vibrio vulnificus (0).The detection rate of vibrio parahaemolyticus (32.14%,45/140) was the highest in 2016.The detection rates of vibrio cholera in 2014 and 2016 were the highest.Vibrio cholerae,vibrio parahaemolyticus,vibrio alginolyticus were all presented in cultivation,sale and catering processes.Vibrio vulnificus was not presented in the above processes.〖WTHZ〗Conclusion Fresh water products in Zibo City are polluted by pathogenic vibrio to different extents,which indicates there are hidden dangers of food safety,especially sale and catering processes. |
